Glorious Greens Scones With Herby Cashew Spread

Ingredients

Scones
● 2 handfuls of fresh spinach, chopped
● 3 dl spelt flour
● 1 1/2 dl rolled oats
● 2 scoops Inika Glorious Greens Plantshake
● 3 tsp baking powder
● 3/4 dl olive oil
● 2 1/2 dl plant milk
● 2 pinches of salt

Herby Cashew Spread
● 2 dl natural cashew nuts
● 1 handful of fresh basil
● 2 tbsp olive oil
● 1 tsp apple cider vinegar
● Salt

Directions

Put the cashews in a bowl. Bring 4 dl water to a boil. Pour it into the bowl and cover the cashews for at least 2 hours.

Preheat the oven to 225°C.

In a bowl, mix together all the dry ingredients. Add olive oil, plant milk, and spinach. Stir together until combined, but without kneading.

Divide the batter into 8 scones and place them on a baking tray, pressing down lightly.

Bake the scones for 15-20 minutes, until golden brown.

Rinse the cashews. Mix them with the rest of the ingredients until you get a spread-like consistency. Salt to taste.

Serve the scones with the green spread.
