Frozen Blueberry Cashew Layer Cake

Ingredients

Blueberry Layer
● 1 dl sunflower seeds
● 2 scoops Inika Blueberry Forest Plantshake
● 10 fresh dates, pitted
● 1 tbsp cold pressed coconut oil
● 1 pinch sea salt

Raspberry Chia Jam Layer
● 3 dl frozen raspberries
● 2 tbsp chia seeds 
● 1 tbsp agave syrup

Cashew Layer
● 2 dl natural cashew nuts
● 1 tbsp agave syrup
● 2 tbsp cold pressed coconut oil
● 3 tbsp water
● 1 pinch sea salt

Garnish
● Lingonberry powder

Directions

Blueberry layer
Soak the cashews in boiling hot water for at least 1 hour.

Toast the sunflower seeds in a hot, dry frying pan until lightly golden.

Mix the toasted sunflower seeds into a flour using a food processor.

Add dates, coconut oil and salt, then mix to form a dough. If needed, add 1-2 tbsp water to achieve the right texture.

Cover an oblong bread tin with plastic film and press the dough into the bottom of the baking tin.

Place in the freezer. 

Raspberry chia jam
Put the raspberries in a small saucepan, add 2 tbsp of water, and bring to a boil. Let simmer for 10 minutes.

Add the chia seeds and agave, then stir.

Remove from heat and let it sit for 15 minutes, stirring every now and then. Let it cool completely.

Cashew layer
Drain the cashews.

Mix cashews, agave syrup, and coconut oil until completely smooth in a food processor or blender. Add vanilla powder and salt.

Spread the cashew mixture evenly over the bottom layer in the tin.

Put back in the freezer for 1 hour.

Assembly
Top the bottom layer with the raspberry chia jam, and then the cashew mixture.

Put it back in the freezer for at least a couple of hours.

Take it out from the fridge about 10 minutes prior to serving, cut it into pieces, let it thaw for a bit, but serve well-chilled.

The cake should be stored in the freezer as it tends to "melt" easily if it’s too warm.

Sprinkle with lingonberry powder before serving.
