5 Superfoods to Fuel Your Mind

As the flowers are starting to bloom, the sun is coming out and the days are getting longer, you are probably starting to crave fresh, crisp, nutritious foods. Luckily, there is an abundance of delicious spring foods that are bursting with fresh, ripe flavours, vitamins, minerals and antioxidants. In this journal we will share some of our favourite spring foods. While you may have access to these foods all year around, they are especially fantastic to eat now - trust us, eating fresh, nourishing food that is in season is pure bliss.

Leafy greens

Leafy greens are bursting with nutrients and they are an absolute must to add to your diet, and they are the ultimate spring food. During spring leafy greens such as spinach, lettuces, and arugula are in season making them the perfect food to add to your diet. Leafy greens are rich in vitamin A and K, fibre, water, chlorophyll, and they are known for helping reduce inflammation and hydrate and detox your body.

Asparagus

Is there anything as yummy as grilled asparagus? Asparagus is the perfect spring food, and they are rich in vitamin K, B vitamins, copper, selenium and other nutrients. We love grilling, roasting or sautéing asparagus. It is extra lovely if you use a bit of garlic and sea salt when cooking asparagus.

Mint

Mint is such a wonderful herb and it grows in abundance during spring and summer. Mint is fantastic as a tea - simply put the fresh leaves in hot water and you have got a delicious cup of mint tea. You can also use mint leaves in salads and smoothies.

Spring onions

Spring onions are abundant during spring, and they are super yum! You can use them raw in salads or tacos, but they are also fantastic when you sauté them with just a pinch of sea salt.Spring onions are rich in polyphenols which can help prevent diseases and reduce oxidative stress. They are also known as natural antihistamines.

Sugar snap peas

Sugar snap peas are a true spring favourite. With their sweet taste they are like nature’s very own candy. You can eat sugar snap peas straight out of the pod. This honestly is the perfect snack! They are also delicious in salads or stir-fries. Or how about a yummy pea puree?They are high in an abundance of vitamins, and they are a fantastic anti-inflammatory food.

Radishes

The last food on our list is radishes. Radishes are known for being great at removing toxins and waste from the liver and stomach. You can use them raw in salads - simply cut them in thin slices. If they are a little bit too bitter for you to eat raw you can roast them and add them to a beautiful noodle or rice salad.

Another cool thing about all of these foods is that you can grow them in your own garden. It’s honestly such an amazing feeling harvesting fresh veggies from your very own vegetable garden. If you don’t have a garden, you can find all of these yummy foods at your local farmer’s market or at the grocery store.
